Honeydew

Honeydew is a class of honey that refer to honey that produced by honeybees, honeybees collecting nectar that is exuded from another insect such as aphid or scale insect. The best known of honeydew is from Black Forest in Germany. Honeydew come from various forest such as forest honey, pine honey, fir honey, etc. that refer to the specific tree that producing of honeydew.

The characteristic of honeydew have lower level of glucose and fructose and higher level of complex sugar, this can be because of extra enzymatic reaction in the sap sucking of glucose and also have high mineral content which is indicate by high conductivity, this indicator also use as the main tool to differ of honeybee in the laboratory  analyses.

The export quality of New Zealand Beech Honeydew is New Zealand premium. This honey have export to Europe and Germany since the early 1970s. There are two species of beech tree inhabited, the sooty beech scales from Margorodidae family produce of the largest New Zealand's honeydew. The beech trees are Black Beech and Red Beech. Two insect that involved on this activity are Ultracoelostoma assimile and Ulatracoelostoma brittini.
